KBL Island Glow Bowl
Healthy Hawaiian Chicken Bowl with Pineapple & Quinoa
Serves: 2–3
Ingredients
For the Bowl:
2 organic chicken breasts or thighs, diced
1 cup cooked tri-color quinoa
1 small avocado, sliced
1 cup fresh pineapple, sliced or cubed
6 spears fresh asparagus, trimmed
1 tbsp chopped pistachios or macadamia nuts (optional)
Microgreens or herbs (optional, for garnish)
For the Chicken Marinade:
2 tbsp coconut aminos
1 tbsp avocado oil or olive oil
1 tsp grated fresh ginger
1 garlic clove, minced
Juice of ½ lime
Pinch of sea salt
Optional Drizzle:
1 tbsp coconut aminos
½ tsp sesame oil
Dash of lime juice
Instructions
Marinate the Chicken:
In a bowl, mix the coconut aminos, oil, ginger, garlic, lime juice, and sea salt. Add diced chicken and marinate for at least 20 minutes (or up to overnight in the fridge).Cook the Chicken & Pineapple:
Heat a grill pan or skillet over medium heat. Cook the marinated chicken for 6–7 minutes, until fully cooked. Grill or sear the pineapple until caramelized and slightly charred, about 1–2 minutes per side.Prepare the Asparagus:
Steam or grill asparagus until bright green and just tender, about 3–4 minutes. Season with a touch of olive oil and salt if desired.Assemble the Bowl:
Layer quinoa, chicken, pineapple, avocado, and asparagus in each bowl. Top with pistachios or macadamias and optional microgreens.Add Drizzle (Optional):
Mix the drizzle ingredients and spoon over each bowl before serving.
